Beef Tongue

Whole, unprocessed beef tongue is a nutrient-dense red meat (rich in iron, B12, zinc) but high in saturated fat and cholesterol. IARC classifies red meat as Group 2A (probably carcinogenic).

Muscle organ of cattle (Bos taurus) consumed as a meat cut.
Whole-food protein cut, typically braised or simmered; popular in tacos de lengua, deli sliced, or as charcuterie.
