Beef Casing
Beef casings are a recognized meat byproduct regulated by USDA FSIS for processing and sanitation. Following BSE-related controls, specified risk material (SRM) restrictions apply, but small intestine sourced for casings outside of the distal ileum (or processed accordingly) is permitted.
What it is
Natural sausage casing made from cleaned beef intestines (small intestine, middles, or rounds).
Edible/inedible container for sausage filling; provides characteristic 'snap' texture.
Why it's flagged
- BSE-related sourcing controls required
- Higher fat in some sausage products themselves
What regulators actually say
