Should I weigh ingredients or use measuring cups?
For baking, weighing is more accurate — even a 5% variation in cup measurement changes texture noticeably. For everyday cooking, cups are fine.
What's the difference between Diamond Crystal and Morton kosher salt?
Diamond Crystal is half the weight of table salt by volume — 1 tsp ≈ 3 g. Morton kosher and table salt are closer to 6 g/tsp. Recipes from Bon Appétit and NYT Cooking usually default to Diamond Crystal.
