Zucchini Tomato Basil Sauce
Ingredients
- 2 tablespoons olive oil
- 3 medium onions, chopped
- 1 1/4 cups zucchini, sliced
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 1 can (8 oz) low-sodium tomato sauce
- 2 cans (6 oz each) low-sodium tomato paste
- 2 medium tomatoes, chopped
- 1 cup water
Method
- 1 Wash hands. Heat olive oil in a medium skillet over medium heat.
- 2 Cook onions, garlic, and zucchini in oil for 5 minutes.
- 3 Add oregano, basil, tomato sauce, tomato paste, tomatoes, and water.
- 4 Simmer covered for 45 minutes. Serve over pasta.
