Zucchini Scrambled Eggs With Cheese
Ingredients
- 1/2 cup chopped zucchini
- 1/4 cup diced onion
- 1 green or red pepper, diced
- 1/4 cup egg
- 2 tablespoons low-fat milk
- 1 tablespoon canola oil
- 1/4 cup garlic and herb seasoning mix
- 1/4 cup Parmesan cheese
- low-fat shredded cheese
Method
- 1 Wash and chop zucchini, onion, and pepper. Set aside.
- 2 Stir egg and milk together in a bowl.
- 3 Sauté vegetables in oil over medium heat, then remove from pan.
- 4 Scramble the egg mixture until cooked thoroughly.
- 5 Stir vegetables into eggs, sprinkle with seasoning and cheese, and serve warm.
