Zucchini Scrambled Eggs With Cheese

  • 1/2 cup chopped zucchini
  • 1/4 cup diced onion
  • 1 green or red pepper, diced
  • 1/4 cup egg
  • 2 tablespoons low-fat milk
  • 1 tablespoon canola oil
  • 1/4 cup garlic and herb seasoning mix
  • 1/4 cup Parmesan cheese
  • low-fat shredded cheese

Method

  1. 1 Wash and chop zucchini, onion, and pepper. Set aside.
