Zucchini Cabbage Slaw

Ingredients

  • 2 cups zucchini, coarsely shredded
  • 1 cup cabbage, shredded
  • 2 medium carrots, shredded
  • 1/2 cup green onions, sliced
  • 1/3 cup radishes, thinly sliced
  • 1/3 cup low-fat mayonnaise
  • mild salsa

Method

  1. 1 Drain the shredded zucchini by pressing it between layers of paper towels to remove excess moisture.
  2. 2 Place the zucchini in a large bowl and add the shredded cabbage, carrots, sliced green onions, and radishes.
  3. 3 In a small bowl, combine the mayonnaise and mild salsa to create the dressing.
  4. 4 Pour the dressing over the vegetables and toss well to coat evenly.
  5. 5 Cover the bowl and chill in the refrigerator for at least one hour before serving.
