Zucchini Cabbage Slaw
Ingredients
- 2 cups zucchini, coarsely shredded
- 1 cup cabbage, shredded
- 2 medium carrots, shredded
- 1/2 cup green onions, sliced
- 1/3 cup radishes, thinly sliced
- 1/3 cup low-fat mayonnaise
- mild salsa
Method
- 1 Drain the shredded zucchini by pressing it between layers of paper towels to remove excess moisture.
- 2 Place the zucchini in a large bowl and add the shredded cabbage, carrots, sliced green onions, and radishes.
- 3 In a small bowl, combine the mayonnaise and mild salsa to create the dressing.
- 4 Pour the dressing over the vegetables and toss well to coat evenly.
- 5 Cover the bowl and chill in the refrigerator for at least one hour before serving.
