Zesty Lemon Rind Sorbet
Ingredients
- yellow rind of 2 lemons
- sugar
- water
- juice of 2 lemons
Method
- 1 Grate lemon rind into sugar, add water, and stir over heat until sugar dissolves.
- 2 Boil the mixture for five minutes, then strain and let cool.
- 3 Add lemon juice to the cooled mixture and freeze according to your ice cream maker's instructions.
