Yogurt Beef Stroganoff With Macaroni
Ingredients
- 1 pound lean beef top round, cut into 1-inch cubes
- 2 teaspoons vegetable oil
- 3/4 tablespoon onion, finely chopped
- 1 pound mushrooms, sliced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon nutmeg
- 1 teaspoon basil (dried)
- 1/4 cup white wine
- 1 cup plain low-fat yogurt
- 6 cups macaroni, cooked
Method
- 1 Cut beef into 1-inch cubes. Heat 1 teaspoon oil in a non-stick skillet.
- 2 Saute onion for 2 minutes. Add beef and saute for 5 minutes until browned. Remove from pan and keep hot.
- 3 Add remaining oil to pan and saute mushrooms.
- 4 Return beef and onions to the pan with seasonings (salt, pepper, nutmeg, basil).
- 5 Add wine and yogurt; gently stir in. Heat gently but do not boil.
- 6 Serve the beef mixture over cooked macaroni.
