Yogurt Beef Stroganoff With Macaroni

Ingredients

  • 1 pound lean beef top round, cut into 1-inch cubes
  • 2 teaspoons vegetable oil
  • 3/4 tablespoon onion, finely chopped
  • 1 pound mushrooms, sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 1 teaspoon basil (dried)
  • 1/4 cup white wine
  • 1 cup plain low-fat yogurt
  • 6 cups macaroni, cooked

Method

  1. 1 Cut beef into 1-inch cubes. Heat 1 teaspoon oil in a non-stick skillet.
  2. 2 Saute onion for 2 minutes. Add beef and saute for 5 minutes until browned. Remove from pan and keep hot.
  3. 3 Add remaining oil to pan and saute mushrooms.
  4. 4 Return beef and onions to the pan with seasonings (salt, pepper, nutmeg, basil).
  5. 5 Add wine and yogurt; gently stir in. Heat gently but do not boil.
  6. 6 Serve the beef mixture over cooked macaroni.
