Yogurt Bacon Potato Salad

Ingredients

  • 1 1/2 pounds red potatoes
  • 1 cup non-fat plain yogurt
  • 1/3 cup minced onion
  • 1/2 cup shredded reduced-fat cheddar cheese
  • 4 tablespoons snipped fresh chives
  • 3 tablespoons real bacon bits or pieces
  • 1/4 teaspoon salt
  • freshly ground pepper to taste
  • chopped fresh parsley (optional)

Method

  1. 1 Place whole potatoes in a microwave-safe dish. Cover and microwave on high for 10-12 minutes until tender.
  2. 2 Let potatoes cool, then cut into bite-sized pieces and place in a large bowl.
  3. 3 Add yogurt, onion, cheese, chives, bacon bits, salt, and pepper. Stir to combine.
  4. 4 Garnish with fresh parsley if desired and serve.
