Yeast-Risen Scalded Cornmeal Cakes
Ingredients
- 1 cup cornmeal
- 2 cups boiling water
- 1 ½ cups water (80°F)
- 3 tbsp syrup
- 1 tsp salt
- ¼ yeast cake
- 2 cups flour
- ¼ tsp baking soda
Method
- 1 Scald 1 cup cornmeal with 2 cups boiling water, then let cool.
- 2 Add 1 ½ cups water (80°F), 3 tbsp syrup, 1 tsp salt, ¼ yeast cake, 2 cups flour, and ¼ tsp baking soda.
- 3 Beat hard and let rise overnight.
- 4 Cook on a hot griddle as you would for buckwheat cakes.
