Yeast-Risen Scalded Cornmeal Cakes

Ingredients

  • 1 cup cornmeal
  • 2 cups boiling water
  • 1 ½ cups water (80°F)
  • 3 tbsp syrup
  • 1 tsp salt
  • ¼ yeast cake
  • 2 cups flour
  • ¼ tsp baking soda

Method

  1. 1 Scald 1 cup cornmeal with 2 cups boiling water, then let cool.
  2. 2 Add 1 ½ cups water (80°F), 3 tbsp syrup, 1 tsp salt, ¼ yeast cake, 2 cups flour, and ¼ tsp baking soda.
  3. 3 Beat hard and let rise overnight.
  4. 4 Cook on a hot griddle as you would for buckwheat cakes.
