Yeast-Risen Hominy Waffles
Ingredients
- 1 cup cold cooked hominy
- 2 cups scalded milk
- 1/2 cake yeast
- 1 tablespoon melted butter
- 1 pinch salt
- 1 tablespoon sugar
- 2 cups flour
- 2 eggs, separated
Method
- 1 Dissolve yeast in scalded milk. Combine with hominy, butter, salt, sugar, and flour. Mix thoroughly.
- 2 Set batter to rise overnight in a warm place.
- 3 In the morning, beat eggs separately. Fold stiffly beaten whites into the batter last.
- 4 Pour batter into very hot, well-greased waffle irons and bake until crisp and golden.
