Yeast-Risen Hominy Waffles

Ingredients

  • 1 cup cold cooked hominy
  • 2 cups scalded milk
  • 1/2 cake yeast
  • 1 tablespoon melted butter
  • 1 pinch salt
  • 1 tablespoon sugar
  • 2 cups flour
  • 2 eggs, separated

Method

  1. 1 Dissolve yeast in scalded milk. Combine with hominy, butter, salt, sugar, and flour. Mix thoroughly.
  2. 2 Set batter to rise overnight in a warm place.
  3. 3 In the morning, beat eggs separately. Fold stiffly beaten whites into the batter last.
  4. 4 Pour batter into very hot, well-greased waffle irons and bake until crisp and golden.
