Yeast Raised Potato Bread
Ingredients
- 8 lbs potatoes
- 12 lbs wheat flour
- yeast
- salt
Method
- 1 Boil potatoes until tender, drain, and let them steam covered for one hour to become mealy.
- 2 Peel the potatoes and mash or pound them until smooth.
- 3 Combine the mashed potatoes with wheat flour and yeast to form a dough.
- 4 Let the dough rise for three hours before baking.
