Yeast Raised Hot Cross Buns
Ingredients
- 1/2 cup butter
- 8 cups sifted flour
- 1 cake compressed yeast
- 3 cups scalded milk
- 1 cup sugar
- 1 cup cleaned currants
- 1/2 nutmeg, grated
- butter for brushing
Method
- 1 Rub 1/2 cup butter into 8 cups sifted flour.
- 2 Dissolve 1 cake compressed yeast in 3 cups scalded milk and add to flour mixture.
- 3 Let the mixture rise for two hours.
- 4 Work in 1 cup sugar, 1 cup cleaned currants, and 1/2 nutmeg, grated.
- 5 Knead the dough, shape into buns, and arrange in pans.
- 6 Score deeply with a cross, brush with butter, and let rise for 15 minutes.
- 7 Bake in a brisk oven (400°F) for 45 minutes.
