Yeast Raised Hot Cross Buns

  • 1/2 cup butter
  • 8 cups sifted flour
  • 1 cake compressed yeast
  • 3 cups scalded milk
  • 1 cup sugar
  • 1 cup cleaned currants
  • 1/2 nutmeg, grated
  • butter for brushing

Method

  1. 1 Rub 1/2 cup butter into 8 cups sifted flour.
  2. 2 Dissolve 1 cake compressed yeast in 3 cups scalded milk and add to flour mixture.
  3. 3 Let the mixture rise for two hours.
  4. 4 Work in 1 cup sugar, 1 cup cleaned currants, and 1/2 nutmeg, grated.
  5. 5 Knead the dough, shape into buns, and arrange in pans.
  6. 6 Score deeply with a cross, brush with butter, and let rise for 15 minutes.
  7. 7 Bake in a brisk oven (400°F) for 45 minutes.
