Yeast Raised Griddle Cakes

Ingredients

  • 1 quart milk
  • 1 tbsp butter
  • Salt to taste
  • 2 eggs, well beaten
  • Flour (enough to make a thin batter)
  • 2 tbsp yeast

Method

  1. 1 Warm the milk and stir in the butter and salt until melted.
  2. 2 Add the beaten eggs to the warm milk mixture.
  3. 3 Stir in flour until the mixture forms a thin batter.
  4. 4 Add the yeast and beat everything well together.
  5. 5 Let the batter rise for five hours.
  6. 6 Pour batter onto a hot griddle to form cakes the size of a breakfast plate.
  7. 7 Serve immediately without buttering them first.
