Yeast Raised Currant Buns

Ingredients

  • 1 lb flour
  • 1/4 lb sugar
  • 4 oz currants
  • 2 oz butter or vegetable butter
  • 3/4 cup milk
  • 1 oz French yeast
  • 2 eggs
  • salt

Method

  1. 1 Mix flour, sugar, salt, and currants in a large bowl.
  2. 2 Warm butter and milk slightly, then mix smoothly with yeast.
  3. 3 Add beaten eggs to the yeast mixture and stir into the flour until moistened.
  4. 4 Let the dough rise by a warm fire for 30 minutes.
  5. 5 Shape into buns and let rise for 10 minutes.
  6. 6 Brush tops with egg and bake for 10 to 15 minutes.
