Yeast Raised Cornmeal Muffins
Ingredients
- 3 pints milk
- Corn meal (enough to make pudding batter consistency)
- 2 handfuls wheat flour
- 2 teaspoons salt
- 3 eggs
- 1 cup yeast
Method
- 1 Warm 3 pints of milk and stir in enough corn meal to make a thick pudding batter.
- 2 Add 2 handfuls wheat flour, 2 teaspoons salt, 3 eggs, and 1 cup yeast. Beat well.
- 3 Let the mixture rise for about 6 hours.
- 4 Bake in a moderate oven (350°F) as you would bake other muffins.
