Yeast Raised Coffee Cake Muffins

Ingredients

  • 1/2 cup shortening
  • 1/2 cup butter
  • 3 cups flour, sifted
  • 2 whole eggs
  • 2 egg yolks
  • 3 tbsp sugar
  • 1/4 cup cream
  • 1/4 cup milk
  • 1 cake yeast
  • 2 tbsp flour
  • salt

Method

  1. 1 Dissolve yeast in 1/4 cup warm milk, add 2 tbsp flour, and let rise in a warm place.
  2. 2 Cream butter and sugar, add salt, then beat in eggs one at a time.
  3. 3 Mix in the yeast sponge, lukewarm cream, and sifted flour to form a batter.
  4. 4 Grease and flour muffin pans, filling them 2/3 full with the batter.
  5. 5 Let dough rise until it reaches the top of the pans.
  6. 6 Bake in a hot oven (400°F) for 25 minutes.
