Yeast Raised Coffee Cake Muffins
Ingredients
- 1/2 cup shortening
- 1/2 cup butter
- 3 cups flour, sifted
- 2 whole eggs
- 2 egg yolks
- 3 tbsp sugar
- 1/4 cup cream
- 1/4 cup milk
- 1 cake yeast
- 2 tbsp flour
- salt
Method
- 1 Dissolve yeast in 1/4 cup warm milk, add 2 tbsp flour, and let rise in a warm place.
- 2 Cream butter and sugar, add salt, then beat in eggs one at a time.
- 3 Mix in the yeast sponge, lukewarm cream, and sifted flour to form a batter.
- 4 Grease and flour muffin pans, filling them 2/3 full with the batter.
- 5 Let dough rise until it reaches the top of the pans.
- 6 Bake in a hot oven (400°F) for 25 minutes.
