Yeast Muffins With Egg Whites

Ingredients

  • 1 pint milk
  • 1 ¼ pounds flour
  • 2 eggs
  • 2 tablespoons active dry yeast
  • Salt to taste
  • 1 large tablespoon melted butter

Method

  1. 1 Warm the milk and stir in the flour, beaten egg yolks, yeast, and salt to form a batter. Let it rise until light.
  2. 2 Just before baking, stir in the melted butter and fold in the stiffly beaten egg whites.
  3. 3 Pour batter into buttered muffin rings or a greased pan. Bake in a moderate oven (350°F) until golden brown.
  4. 4 Split the muffins and serve warm with butter.
