Yeast Muffins With Egg Whites
Ingredients
- 1 pint milk
- 1 ¼ pounds flour
- 2 eggs
- 2 tablespoons active dry yeast
- Salt to taste
- 1 large tablespoon melted butter
Method
- 1 Warm the milk and stir in the flour, beaten egg yolks, yeast, and salt to form a batter. Let it rise until light.
- 2 Just before baking, stir in the melted butter and fold in the stiffly beaten egg whites.
- 3 Pour batter into buttered muffin rings or a greased pan. Bake in a moderate oven (350°F) until golden brown.
- 4 Split the muffins and serve warm with butter.
