Yeast French Rolls
Ingredients
- 2-3 tbsp yeast
- 2-3 tbsp warm water
- 2-3 small lumps loaf sugar
- 1 egg yolk
- 1 quart finest flour
- 1 oz butter
- 1 quart new milk
- 1 pint boiling water
Method
- 1 Mix yeast, warm water, sugar, and egg yolk. Let stand until risen.
- 2 Rub butter into flour. Heat milk with boiling water until warm.
- 3 Strain warm milk mixture into flour. Mix into a light paste.
- 4 Place paste in floured linen on flannel. Wrap and let rise near heat.
- 5 Shape into 10 rolls. Bake in a quick oven (425°F) for 15 minutes.
