Wine Pancakes With Nutmeg
Ingredients

- 6 eggs, well-beaten
- 3 tablespoons white wine
- 4 ounces melted butter, nearly cold
- 4 ounces powdered sugar
- ½ nutmeg, grated
- 1 pint heavy cream
Method
- 1 In a large bowl, whisk together the flour, beaten eggs, white wine, melted butter, sugar, grated nutmeg, and cream until smooth.
- 2 Beat the batter vigorously for several minutes to ensure it is well-mixed and aerated.
- 3 Heat a skillet over medium heat. Pour a thin layer of batter into the pan.
- 4 Cook until bubbles form and edges set, then flip carefully to cook the other side until golden brown.
