Wholemeal Fruit Cake With Mixed Peel
Ingredients
- 6 oz butter
- 1 1/4 lbs Allinson wholemeal flour
- 6 oz sugar
- 4 eggs, separated
- 3/4 cup milk
- 2 oz mixed peel, cut small
- 1/2 lb mixed sultanas
Method
- 1 Rub butter into flour and sugar until mixture resembles breadcrumbs.
- 2 Beat egg yolks with milk, then mix into the flour mixture to form a stiff batter.
- 3 Fold in mixed peel and sultanas, then gently whisk in beaten egg whites.
- 4 Pour into a greased cake tin and bake for 1.5 to 2 hours.
