Wholemeal Fruit Cake With Mixed Peel

Ingredients

  • 6 oz butter
  • 1 1/4 lbs Allinson wholemeal flour
  • 6 oz sugar
  • 4 eggs, separated
  • 3/4 cup milk
  • 2 oz mixed peel, cut small
  • 1/2 lb mixed sultanas

Method

  1. 1 Rub butter into flour and sugar until mixture resembles breadcrumbs.
  2. 2 Beat egg yolks with milk, then mix into the flour mixture to form a stiff batter.
  3. 3 Fold in mixed peel and sultanas, then gently whisk in beaten egg whites.
  4. 4 Pour into a greased cake tin and bake for 1.5 to 2 hours.
