Wholemeal Fruit And Almond Yeast Cake
Ingredients
- 1 lb wholemeal flour
- 4 oz sugar
- 1 tsp cinnamon
- 1 cup mixed currants and sultanas, washed and picked
- 3 oz chopped sweet almonds
- 1 dozen ground bitter almonds
- 3 eggs, beaten
- 1/4 oz German yeast
- 1/4 lb butter
- Warm milk, as needed
Method
- 1 Rub butter into the wholemeal flour.
- 2 Add sugar, cinnamon, fruit, and almonds to the flour mixture.
- 3 Beat the eggs and add them to the dry ingredients.
- 4 Dissolve yeast in a cup of warm milk (not hot) and add to the mixture.
- 5 Mix into a moist dough, adding more milk if necessary to allow spoon beating.
- 6 Cover the bowl and let rise for 1.5 hours in a warm spot, turning occasionally.
- 7 Transfer dough to greased tins and bake in a hot oven (425°F) for 1 to 1.5 hours.
- 8 Cover with paper if the top browns too quickly.
