Whole Wheat Yeast Bread
Ingredients
- 1 cup milk
- 1 cup water
- 1 tsp salt
- 1 compressed yeast cake
- Whole wheat flour, as needed
Method
- 1 Scald 1 cup milk, then add 1 cup water and 1 tsp salt. Let cool until lukewarm.
- 2 Moisten 1 compressed yeast cake in a little warm water. Add to the milk mixture along with enough whole wheat flour to make a batter. Beat thoroughly.
- 3 Cover and let stand for 2.5 hours. Stir, then add more whole wheat flour to form a dough.
- 4 Knead quickly. Divide into loaves and place in square greased pans. Cover and let rise in a warm place for 1 hour until very light.
- 5 Slash tops with a sharp knife, brush with water, and bake in a moderate oven (350°F) for 45 minutes.
