Whole Wheat Spaghetti With Meat Sauce

Ingredients

  • 1 pound whole wheat spaghetti
  • 2 teaspoons extra virgin olive oil
  • 1 large onion, finely chopped
  • 1 large carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 pound lean ground beef (90% or leaner)
  • 1 14-ounce can crushed tomatoes
  • 1/4 cup chopped flat-leaf parsley
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt

Method

  1. 1 Cook pasta according to package directions. Drain.
  2. 2 Heat oil in a large skillet over medium heat. Add onion, carrot, and celery; cook until onion begins to brown, 5 to 8 minutes.
  3. 3 Stir in garlic and Italian seasoning; cook until fragrant, about 30 seconds.
  4. 4 Add beef and cook, breaking up with a spoon, until no longer pink, 3 to 5 minutes.
  5. 5 Increase heat to high. Stir in tomatoes and cook until thickened, 4 to 6 minutes.
  6. 6 Stir in parsley and salt. Serve sauce over pasta, sprinkled with cheese.
