Whole Wheat Prune Swirl Cake
Ingredients
- 2 cups whole wheat flour
- 1 cup milk
- 1 tablespoon fat
- 2 tablespoons sugar
- 1/8 teaspoon salt
- 1 egg
- 1/2 lb. washed and scalded prunes, dates, figs or raisins
- 2 teaspoons baking powder
- 1/2 cup water
- 1 tablespoon corn syrup
Method
- 1 Soak prunes in 1/2 cup water for 10 minutes, then simmer until tender. Drain and mash into a pulp.
- 2 Mix flour, baking powder, and salt. Add beaten egg, milk, and fat to form a dough.
- 3 Roll dough thin, spread with prune pulp, and sprinkle with 2 tablespoons sugar. Roll up and place in a greased baking dish.
- 4 Bake at 350°F for 30 to 40 minutes.
- 5 Boil 1/2 cup prune juice with 1 tablespoon corn syrup to make a sauce. Serve warm with the roll.
