Whole Wheat Prune Swirl Cake

Ingredients

  • 2 cups whole wheat flour
  • 1 cup milk
  • 1 tablespoon fat
  • 2 tablespoons sugar
  • 1/8 teaspoon salt
  • 1 egg
  • 1/2 lb. washed and scalded prunes, dates, figs or raisins
  • 2 teaspoons baking powder
  • 1/2 cup water
  • 1 tablespoon corn syrup

Method

  1. 1 Soak prunes in 1/2 cup water for 10 minutes, then simmer until tender. Drain and mash into a pulp.
  2. 2 Mix flour, baking powder, and salt. Add beaten egg, milk, and fat to form a dough.
  3. 3 Roll dough thin, spread with prune pulp, and sprinkle with 2 tablespoons sugar. Roll up and place in a greased baking dish.
  4. 4 Bake at 350°F for 30 to 40 minutes.
  5. 5 Boil 1/2 cup prune juice with 1 tablespoon corn syrup to make a sauce. Serve warm with the roll.
