Whole Wheat Oatmeal Fruit Muffins

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/2 cup cooked oatmeal
  • 2/3 cup corn syrup
  • 1/2 cup raisins, dates, prunes, or figs
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 3 tablespoons fat

Method

  1. 1 Heat the corn syrup and fat together in a saucepan.
  2. 2 Sift the dry ingredients (flour, oatmeal, soda, baking powder, cinnamon) and add them to the warm liquid mixture.
  3. 3 Fold in the chopped fruit last.
  4. 4 Spoon batter into muffin pans and bake for 30 minutes.
