Whole Wheat Oatmeal Fruit Muffins
Ingredients
- 1 1/2 cups whole wheat flour
- 1/2 cup cooked oatmeal
- 2/3 cup corn syrup
- 1/2 cup raisins, dates, prunes, or figs
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 3 tablespoons fat
Method
- 1 Heat the corn syrup and fat together in a saucepan.
- 2 Sift the dry ingredients (flour, oatmeal, soda, baking powder, cinnamon) and add them to the warm liquid mixture.
- 3 Fold in the chopped fruit last.
- 4 Spoon batter into muffin pans and bake for 30 minutes.
