Whole Wheat Oatmeal Bread
Ingredients
- 1 cup rolled oats
- 1 teaspoon salt
- 1/4 cup boiling water
- 1 packet dry yeast
- 1/4 cup warm water (105-115°F)
- 1 1/2 tablespoons molasses
- 1/4 cup vegetable oil
- 2 cups whole wheat flour
- 2 cups all-purpose flour
Method
- 1 Combine rolled oats and salt in a large bowl. Stir in boiling water and cool to lukewarm (105-115°F).
- 2 Dissolve yeast in 1/4 cup warm water in a small bowl.
- 3 Add yeast water, molasses, and oil to the oatmeal mixture. Stir in whole wheat flour and 1 cup all-purpose flour. Add more flour as needed to form a stiff dough.
- 4 Knead dough on a lightly floured surface for 5 minutes until smooth and elastic.
- 5 Place dough in an oiled bowl, turning to coat. Cover and let rise in a warm place until doubled, about 1 hour.
- 6 Punch down dough, shape, and place in a greased 9x5 inch pan. Cover and rise until almost doubled, about 1 hour.
- 7 Preheat oven to 375°F. Bake for 50 minutes or until hollow-sounding when tapped. Cover with foil if browning too quickly. Cool on a wire rack.
