Whole Wheat Muffins

Ingredients

  • 3 cups whole wheat flour
  • 2 tablespoons baking powder
  • 1 pinch salt
  • 1 tablespoon sugar
  • 1 ½ cups sweet milk
  • 1 egg yolk, well-beaten
  • 2 tablespoons melted butter
  • 1 egg white, beaten to stiff peaks

Method

  1. 1 Sift together 3 cups whole wheat flour, 2 tablespoons baking powder, a pinch of salt, and 1 tablespoon sugar.
  2. 2 Stir 1 well-beaten egg yolk into 1 ½ cups sweet milk. Add 2 tablespoons melted butter.
  3. 3 Pour the milk mixture into the dry ingredients and mix thoroughly.
  4. 4 Fold in 1 egg white beaten to stiff peaks.
  5. 5 Pour into hot buttered muffin pans and bake in a 350°F oven for about 20 minutes.
