Whole Wheat Muffins
Ingredients
- 3 cups whole wheat flour
- 2 tablespoons baking powder
- 1 pinch salt
- 1 tablespoon sugar
- 1 ½ cups sweet milk
- 1 egg yolk, well-beaten
- 2 tablespoons melted butter
- 1 egg white, beaten to stiff peaks
Method
- 1 Sift together 3 cups whole wheat flour, 2 tablespoons baking powder, a pinch of salt, and 1 tablespoon sugar.
- 2 Stir 1 well-beaten egg yolk into 1 ½ cups sweet milk. Add 2 tablespoons melted butter.
- 3 Pour the milk mixture into the dry ingredients and mix thoroughly.
- 4 Fold in 1 egg white beaten to stiff peaks.
- 5 Pour into hot buttered muffin pans and bake in a 350°F oven for about 20 minutes.
