Whole Wheat Gingerbread With Raisins And Nuts

  • 4 tablespoons sugar
  • 1/2 cup Crisco
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/4 cup milk
  • 2 cups flour
  • 2 cups whole wheat flour
  • 1/2 cup seeded raisins
  • 1/2 teaspoon salt
  • 1 1/2 cups molasses
  • 1/2 cup chopped nut meats
  • 1 teaspoon powdered ginger
  • 1/2 teaspoon powdered mace
  • 1 teaspoon powdered cinnamon
  • 3 tablespoons chopped candied lemon peel

Method

  1. 1 Mix flours, candied lemon peel, raisins, nuts, spices, and salt in a bowl.
  2. 2 Melt Crisco, molasses, and sugar together, then let cool slightly.
  3. 3 Beat eggs well and mix baking soda into milk.
  4. 4 Combine the cooled molasses mixture with the beaten eggs and milk-soda mixture.
  5. 5 Add wet ingredients to dry ingredients and mix well.
  6. 6 Pour batter into a greased and floured cake tin.
