Whole Wheat Gingerbread With Raisins And Nuts
Ingredients
- 4 tablespoons sugar
- 1/2 cup Crisco
- 2 eggs
- 1 teaspoon baking soda
- 1/4 cup milk
- 2 cups flour
- 2 cups whole wheat flour
- 1/2 cup seeded raisins
- 1/2 teaspoon salt
- 1 1/2 cups molasses
- 1/2 cup chopped nut meats
- 1 teaspoon powdered ginger
- 1/2 teaspoon powdered mace
- 1 teaspoon powdered cinnamon
- 3 tablespoons chopped candied lemon peel
Method
- 1 Mix flours, candied lemon peel, raisins, nuts, spices, and salt in a bowl.
- 2 Melt Crisco, molasses, and sugar together, then let cool slightly.
- 3 Beat eggs well and mix baking soda into milk.
- 4 Combine the cooled molasses mixture with the beaten eggs and milk-soda mixture.
- 5 Add wet ingredients to dry ingredients and mix well.
- 6 Pour batter into a greased and floured cake tin.
- 7 Bake in a moderate oven (350°F) for one hour.
