Whole Wheat Currin Almond Rock Cakes

Ingredients

  • 1 lb whole wheat flour
  • 3 oz butter or vegetable shortening
  • 1/4 lb granulated sugar
  • 1 cup mixed currants and sultanas
  • 3 oz blanched almonds, finely chopped
  • 1 tsp ground cinnamon
  • 3 large eggs
  • 3/4 cup milk
  • Flour for greasing tins

Method

  1. 1 Rub the butter into the flour until the mixture resembles coarse crumbs.
  2. 2 Add the fruit, almonds, sugar, and cinnamon, then mix well.
  3. 3 Beat the eggs with the milk, then combine with the dry ingredients to form a stiff paste.
  4. 4 Place small lumps of paste onto lightly floured baking sheets.
  5. 5 Bake in a 400°F oven for 25 to 35 minutes until golden brown.
