Whole Wheat Currin Almond Rock Cakes
Ingredients
- 1 lb whole wheat flour
- 3 oz butter or vegetable shortening
- 1/4 lb granulated sugar
- 1 cup mixed currants and sultanas
- 3 oz blanched almonds, finely chopped
- 1 tsp ground cinnamon
- 3 large eggs
- 3/4 cup milk
- Flour for greasing tins
Method
- 1 Rub the butter into the flour until the mixture resembles coarse crumbs.
- 2 Add the fruit, almonds, sugar, and cinnamon, then mix well.
- 3 Beat the eggs with the milk, then combine with the dry ingredients to form a stiff paste.
- 4 Place small lumps of paste onto lightly floured baking sheets.
- 5 Bake in a 400°F oven for 25 to 35 minutes until golden brown.
