Whole Wheat Currant Buns
Ingredients
- 1 cup water
- 1 cup milk
- 1 oz active dry yeast
- 1 oz granulated sugar
- 6 oz whole wheat flour
- 1 egg (optional)
- 1 3/4 lbs whole wheat flour
- 1/4 lb margarine or butter
- 5 oz granulated sugar
- 1/2 lb currants
- 1 pinch salt
Method
- 1 Warm water and milk to 105°F. Dissolve 1 oz sugar and yeast in the liquid, then stir in 6 oz flour.
- 2 Cover and let rise in a warm place for 45 minutes until bubbly.
- 3 Melt the butter/margarine. In a large bowl, combine remaining flour, 5 oz sugar, salt, and currants.
- 4 Add the yeast mixture and melted butter to the dry ingredients. Mix until a soft dough forms.
- 5 Cover and let rise in a warm place for 45 minutes, then punch down the dough.
- 6 Let dough rest for 30 minutes. Shape into buns, place on a greased baking sheet, and prove for 15 minutes.
- 7 Bake in a 350°F oven for 20 minutes until golden brown.
