Whole Wheat Cinnamon Sugar Muffins
Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/4 cup brown sugar, firmly packed
- 1 cup 1% low-fat milk
- 2 eggs
- 1 teaspoon vanilla extract (optional)
- 1/4 cup margarine or butter, melted (or 1/4 cup vegetable oil)
- 1 tablespoon sugar
- 1/2 teaspoon ground cinnamon
Method
- 1 Preheat oven to 400°F. Lightly oil or spray a 12-cup muffin pan with non-stick spray, or line with paper cups.
- 2 In a small bowl, mix 1 tablespoon sugar and 1/2 teaspoon cinnamon for the topping; set aside.
- 3 In a large bowl, whisk together all-purpose flour, whole wheat flour, salt, baking powder, and brown sugar.
- 4 In a separate liquid measuring cup, combine milk, eggs, vanilla, and melted butter (or oil). Stir with a fork to combine.
- 5 Pour the wet ingredients over the dry ingredients. Stir gently with a spoon about 20 times until just moistened; batter should be lumpy.
- 6 Divide batter evenly among muffin cups, filling each about 2/3 full. Sprinkle each with the cinnamon-sugar topping.
- 7 Bake for 20 to 25 minutes until golden brown. Serve warm or freeze leftovers.
