Whole Wheat Cinnamon Sugar Muffins

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/4 cup brown sugar, firmly packed
  • 1 cup 1% low-fat milk
  • 2 eggs
  • 1 teaspoon vanilla extract (optional)
  • 1/4 cup margarine or butter, melted (or 1/4 cup vegetable oil)
  • 1 tablespoon sugar
  • 1/2 teaspoon ground cinnamon

Method

  1. 1 Preheat oven to 400°F. Lightly oil or spray a 12-cup muffin pan with non-stick spray, or line with paper cups.
  2. 2 In a small bowl, mix 1 tablespoon sugar and 1/2 teaspoon cinnamon for the topping; set aside.
  3. 3 In a large bowl, whisk together all-purpose flour, whole wheat flour, salt, baking powder, and brown sugar.
  4. 4 In a separate liquid measuring cup, combine milk, eggs, vanilla, and melted butter (or oil). Stir with a fork to combine.
  5. 5 Pour the wet ingredients over the dry ingredients. Stir gently with a spoon about 20 times until just moistened; batter should be lumpy.
  6. 6 Divide batter evenly among muffin cups, filling each about 2/3 full. Sprinkle each with the cinnamon-sugar topping.
  7. 7 Bake for 20 to 25 minutes until golden brown. Serve warm or freeze leftovers.
