Whole Wheat Barley Muffins
Ingredients
- 1 1/2 cups whole wheat flour
- 1 cup barley meal
- 1/2 teaspoon salt
- 3 teaspoons baking powder
- 1 egg
- 1 1/2 cups sour milk
- 1/2 teaspoon soda
- 2 tablespoons drippings
Method
- 1 Sift the whole wheat flour, barley meal, salt, and baking powder together into a bowl.
- 2 Dissolve the soda in a little cold water and add it to the sour milk.
- 3 Combine the flour mixture with the sour milk mixture, then stir in the beaten egg and melted drippings.
- 4 Pour batter into muffin pans and bake in a moderate oven (350°F) for 25 minutes.
