Whole Prune Souffle With Vanilla
Ingredients
- 1/2 lb prunes
- 3 tablespoons powdered sugar
- 4 eggs
- 1/2 teaspoon vanilla
- dash of salt
Method
- 1 Stew prunes, drain, remove stones, and cut each prune into four pieces.
- 2 Beat egg yolks and powdered sugar until creamy, then mix in vanilla and prunes.
- 3 Whip egg whites with a dash of salt until stiff peaks form.
- 4 Lightly fold the whipped egg whites into the prune mixture.
- 5 Pour into a pudding dish and bake in a moderate oven (350°F) for 20 minutes.
- 6 Serve very hot immediately after removing from the oven.
