Whole Prune Souffle With Vanilla

Ingredients

  • 1/2 lb prunes
  • 3 tablespoons powdered sugar
  • 4 eggs
  • 1/2 teaspoon vanilla
  • dash of salt

Method

  1. 1 Stew prunes, drain, remove stones, and cut each prune into four pieces.
  2. 2 Beat egg yolks and powdered sugar until creamy, then mix in vanilla and prunes.
  3. 3 Whip egg whites with a dash of salt until stiff peaks form.
  4. 4 Lightly fold the whipped egg whites into the prune mixture.
  5. 5 Pour into a pudding dish and bake in a moderate oven (350°F) for 20 minutes.
  6. 6 Serve very hot immediately after removing from the oven.
