Whole Pickled Cucumbers

Ingredients

  • Cucumber rinds, peeled
  • 1 quart water
  • 1 pint white vinegar
  • 1 handful salt
  • Young cucumbers, whole

Method

  1. 1 Boil cucumber rinds in water, vinegar, and salt until soft.
  2. 2 Let the mixture cool completely, then strain and reserve the liquid.
  3. 3 Pack young cucumbers into a clean jar or barrel.
  4. 4 Pour the cooled brine over the cucumbers to cover them completely.
  5. 5 Seal tightly and store for up to a year.
