Whole Pickled Cucumbers
Ingredients
- Cucumber rinds, peeled
- 1 quart water
- 1 pint white vinegar
- 1 handful salt
- Young cucumbers, whole
Method
- 1 Boil cucumber rinds in water, vinegar, and salt until soft.
- 2 Let the mixture cool completely, then strain and reserve the liquid.
- 3 Pack young cucumbers into a clean jar or barrel.
- 4 Pour the cooled brine over the cucumbers to cover them completely.
- 5 Seal tightly and store for up to a year.
