White Wine Pickled Oysters
Ingredients
- large oysters
- white wine
- vinegar
- oyster liquor
- mace
- white pepper
- lemon peel
- salt
Method
- 1 Plump oysters in their own liquor over heat, then strain and reserve the liquor. Cover oysters in a cloth.
- 2 Combine equal parts white wine and vinegar with some oyster liquor, mace, white pepper, thin lemon peel, and salt.
- 3 Bring the liquid mixture to a boil, then add the oysters and let them boil once.
- 4 Place oysters and pickle in a pot, cover tightly with a cloth, and let cool completely.
