White Wine Pickled Oysters

Ingredients

  • large oysters
  • white wine
  • vinegar
  • oyster liquor
  • mace
  • white pepper
  • lemon peel
  • salt

Method

  1. 1 Plump oysters in their own liquor over heat, then strain and reserve the liquor. Cover oysters in a cloth.
  2. 2 Combine equal parts white wine and vinegar with some oyster liquor, mace, white pepper, thin lemon peel, and salt.
  3. 3 Bring the liquid mixture to a boil, then add the oysters and let them boil once.
  4. 4 Place oysters and pickle in a pot, cover tightly with a cloth, and let cool completely.
