White Wine Green Bean Stew

Ingredients

  • 1 tbsp butter, rolled in flour
  • 1 glass white wine (or 1 tumbler cream)
  • 1 quart green beans, soaked 15 minutes, strung and cut small
  • 1 tbsp parsley, chopped fine
  • 1 tbsp chives or little onions, chopped fine
  • 4 mushrooms, chopped (optional)
  • 2 egg yolks
  • Water as needed

Method

  1. 1 Soak the beans in cold water for 15 minutes, then strain, string, and cut them into small pieces.
  2. 2 In a stew-pan, melt butter rolled in flour with chopped parsley, chives (or little onions), and mushrooms. Add the wine and a little water.
  3. 3 Add the prepared beans to the pan. Cover and stew gently on hot coals or low heat until the beans are quite tender.
  4. 4 Just before serving, stir in the egg yolks to thicken and enrich the sauce. Serve immediately.
