White Chicken Chili With Green Chilies

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 teaspoons garlic powder
  • 1/2 teaspoon black pepper
  • 1 can (4 oz) green chilies, drained and diced
  • 2 teaspoons ground cumin
  • 2 cans (15.5 oz each) Great Northern beans, low sodium
  • 1 1/2 cups cooked chicken, cubed
  • 1 can (14.5 oz) low-sodium chicken broth
  • 1/2 cup shredded mozzarella cheese
  • Fresh parsley, optional for garnish

Method

  1. 1 Heat olive oil in a large saucepan over medium heat. Add chopped onion and cook until tender.
  2. 2 Stir in green chilies, beans (undrained), chicken broth, garlic powder, black pepper, and cumin.
  3. 3 Add the cubed cooked chicken and bring the mixture to a boil.
