White Chicken Chili With Green Chilies
Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 teaspoons garlic powder
- 1/2 teaspoon black pepper
- 1 can (4 oz) green chilies, drained and diced
- 2 teaspoons ground cumin
- 2 cans (15.5 oz each) Great Northern beans, low sodium
- 1 1/2 cups cooked chicken, cubed
- 1 can (14.5 oz) low-sodium chicken broth
- 1/2 cup shredded mozzarella cheese
- Fresh parsley, optional for garnish
Method
- 1 Heat olive oil in a large saucepan over medium heat. Add chopped onion and cook until tender.
- 2 Stir in green chilies, beans (undrained), chicken broth, garlic powder, black pepper, and cumin.
- 3 Add the cubed cooked chicken and bring the mixture to a boil.
- 4 Reduce heat and simmer for 10 minutes or until the chili reaches your desired thickness.
- 5 Serve hot, topped with shredded mozzarella cheese and fresh parsley if desired.
