White Bean Salad With Herbs
Ingredients
- 1 pint cooked white beans
- 1 tablespoon vinegar
- 3 tablespoons oil
- Salt to taste
- Dash of cayenne or paprika
- Shredded lettuce
- Finely chopped chives
- Finely chopped parsley
- Finely chopped pimentos
- 1 large pimiento
Method
- 1 Toss the cooked white beans with vinegar, oil, salt, and cayenne or paprika.
- 2 Arrange the beans in a mound on a bed of shredded lettuce.
- 3 Sprinkle with finely chopped chives, parsley, and pimentos.
- 4 Place a large pimiento on top to finish.
