White Bean Chicken Chili
Ingredients
- 4 cups white beans, cooked
- 1 tablespoon olive oil
- 2 red peppers, chopped
- 1 large onion, chopped
- 3 chopped green chilies
- 1 tablespoon minced garlic
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 2 cups oregano
- 2 cups low-sodium chicken broth
- 1/4 cup 1% low-fat milk
- 3/4 pound cilantro
- 1 pound chicken, cooked and cubed
- Corn tortillas, toasted and cut into 1-inch squares
Method
- 1 Sauté red peppers and onion in olive oil until softened.
- 2 Add green chilies, garlic, chili powder, cumin, and chicken broth. Simmer for 20 minutes.
- 3 Stir in milk, cooked white beans, and cubed chicken. Heat through.
- 4 Remove from heat and stir in cilantro. Serve topped with crisp tortilla squares.
