Ingredients

  • 2 ½ cups heavy cream
  • 1 cup Rhenish wine
  • ½ cup sack (sherry)
  • juice of 3 lemons
  • 1 lb powdered sugar
  • zest of 3 lemons

Method

  1. 1 Sift powdered sugar into a large bowl.
  2. 2 Add heavy cream, Rhenish wine, sherry, lemon juice, and lemon zest.
  3. 3 Whisk vigorously for 30 minutes until thickened.
  4. 4 Spoon into glasses and serve.
