Whipped Egg White Butter Rolls

Ingredients

  • 2 lbs all-purpose flour
  • 2 oz butter
  • 2 egg whites
  • 1 tbsp yeast
  • 4 tbsp heavy cream
  • 1 egg yolk
  • 1 pint milk
  • Butter for greasing cups

Method

  1. 1 Rub 2 oz butter into 1 lb flour. Whisk 2 egg whites to stiff peaks and fold in.
  2. 2 Add 1 tbsp yeast, 4 tbsp cream, 1 egg yolk, and 1 pint warm milk. Mix to a batter.
  3. 3 Beat the mixture for 10 minutes. Cover and let rise near warmth for 2 hours.
  4. 4 Knead in the remaining 1 lb flour. Let rest for 15 minutes.
  5. 5 Fill buttered earthenware cups halfway with dough. Bake in a very hot oven (425°F) for 15 minutes.
