Whipped Egg White Butter Rolls
Ingredients
- 2 lbs all-purpose flour
- 2 oz butter
- 2 egg whites
- 1 tbsp yeast
- 4 tbsp heavy cream
- 1 egg yolk
- 1 pint milk
- Butter for greasing cups
Method
- 1 Rub 2 oz butter into 1 lb flour. Whisk 2 egg whites to stiff peaks and fold in.
- 2 Add 1 tbsp yeast, 4 tbsp cream, 1 egg yolk, and 1 pint warm milk. Mix to a batter.
- 3 Beat the mixture for 10 minutes. Cover and let rise near warmth for 2 hours.
- 4 Knead in the remaining 1 lb flour. Let rest for 15 minutes.
- 5 Fill buttered earthenware cups halfway with dough. Bake in a very hot oven (425°F) for 15 minutes.
