Whipped Egg Nutmeg Doughnuts

Ingredients

  • 3/4 cup granulated sugar
  • 2 eggs, separated
  • 1 cup milk
  • 3 tablespoons melted butter
  • 3 cups flour
  • 3 heaping teaspoons baking powder
  • 1/2 teaspoon grated nutmeg
  • Additional sifted flour, about 2 cups

Method

  1. 1 Beat the egg yolks with the sugar, milk, and melted butter until well combined.
  2. 2 Sift together the flour, baking powder, and nutmeg, then fold into the wet ingredients.
  3. 3 Beat the egg whites until stiff peaks form, then gently fold them into the batter.
  4. 4 Add enough additional sifted flour to form a soft dough.
  5. 5 Roll the dough very thin on a floured surface and cut into desired shapes.
  6. 6 Fry in smoking-hot fat until golden brown, then drain on brown paper.
