Whipped Egg Nutmeg Doughnuts
Ingredients
- 3/4 cup granulated sugar
- 2 eggs, separated
- 1 cup milk
- 3 tablespoons melted butter
- 3 cups flour
- 3 heaping teaspoons baking powder
- 1/2 teaspoon grated nutmeg
- Additional sifted flour, about 2 cups
Method
- 1 Beat the egg yolks with the sugar, milk, and melted butter until well combined.
- 2 Sift together the flour, baking powder, and nutmeg, then fold into the wet ingredients.
- 3 Beat the egg whites until stiff peaks form, then gently fold them into the batter.
- 4 Add enough additional sifted flour to form a soft dough.
- 5 Roll the dough very thin on a floured surface and cut into desired shapes.
- 6 Fry in smoking-hot fat until golden brown, then drain on brown paper.
