Wheatmeal Crusted Bean And Potato Pie
Ingredients
- 6 oz haricot beans, boiled
- 1/2 lb onions, chopped and boiled until soft
- 1 lb tomatoes, sliced
- 1/2 lb parboiled potatoes, diced
- 2 hard-boiled eggs, sliced
- 1 teaspoon dried herbs
- 5 oz butter, divided
- 1/2 lb fine wheatmeal
- Salt and pepper to taste
- 1 pint water
- Cold water for dough
Method
- 1 Preheat oven to 350°F. Place boiled beans, soft onions, diced potatoes, sliced tomatoes, and sliced eggs into a pie dish.
- 2 Add 1 oz butter, herbs, salt, and pepper to the dish. Pour in 1 pint of water and let it sit for a moment.
- 3 Mix wheatmeal with remaining 4 oz butter and enough cold water to form a stiff paste. Cover the vegetable mixture with the paste.
- 4 Bake in a moderate oven (350°F) for 1 hour until the crust is set and cooked through.
