Wheatmeal Crusted Bean And Potato Pie

Ingredients

  • 6 oz haricot beans, boiled
  • 1/2 lb onions, chopped and boiled until soft
  • 1 lb tomatoes, sliced
  • 1/2 lb parboiled potatoes, diced
  • 2 hard-boiled eggs, sliced
  • 1 teaspoon dried herbs
  • 5 oz butter, divided
  • 1/2 lb fine wheatmeal
  • Salt and pepper to taste
  • 1 pint water
  • Cold water for dough

Method

  1. 1 Preheat oven to 350°F. Place boiled beans, soft onions, diced potatoes, sliced tomatoes, and sliced eggs into a pie dish.
  2. 2 Add 1 oz butter, herbs, salt, and pepper to the dish. Pour in 1 pint of water and let it sit for a moment.
  3. 3 Mix wheatmeal with remaining 4 oz butter and enough cold water to form a stiff paste. Cover the vegetable mixture with the paste.
  4. 4 Bake in a moderate oven (350°F) for 1 hour until the crust is set and cooked through.
