Watercress Salad With Citrus And Alexander Buds

Ingredients

  • 1 bunch watercress, picked and washed
  • 1 orange, sliced
  • 1 lemon, sliced
  • 1 cup Alexander buds (raw or boiled)
  • 1 cup currants
  • 2 tbsp olive oil
  • 1 tbsp vinegar
  • 1 tsp sugar (optional)

Method

  1. 1 Wash and pick the watercress, then arrange it in the center of a clean serving dish.
  2. 2 Slice the orange and lemon. Arrange the slices decoratively around the watercress or in partitions on the dish.
  3. 3 Add the Alexander buds (boiled or raw) and currants to the dish.
  4. 4 Drizzle with olive oil and vinegar. Sprinkle with sugar if desired, then serve.
