Watercress Potato And Egg Salad
Ingredients
- 4 medium cold boiled potatoes
- 6 hard-boiled eggs
- 1 bunch watercress
- Mayonnaise
- Salt and pepper to taste
Method
- 1 Slice the cold boiled potatoes and quarter the hard-boiled eggs.
- 2 Arrange the potatoes and eggs in a serving dish, sprinkling salt and pepper between the layers.
- 3 Mix pieces of watercress with the eggs and potatoes, then pour mayonnaise over the top.
- 4 Garnish with additional watercress before serving.
