Watercress And Walnut Salad
Ingredients
- 1 bunch watercress
- ½ cup broken English walnuts
- 1 tbsp lemon juice
- 2 tbsp olive oil
- 1 tbsp vinegar
- Salt to taste
Method
- 1 Wash and drain the watercress, picking off tender sprigs and placing them in a salad bowl.
- 2 Soak the broken English walnuts in lemon juice.
- 3 Whisk together olive oil and vinegar in a 2:1 ratio, seasoning only with salt.
- 4 Toss the cress and soaked walnuts with the dressing and serve immediately.
