  • 1 bunch watercress
  • ½ cup broken English walnuts
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tbsp vinegar
  • Salt to taste

Method

  1. 1 Wash and drain the watercress, picking off tender sprigs and placing them in a salad bowl.
  2. 2 Soak the broken English walnuts in lemon juice.
  3. 3 Whisk together olive oil and vinegar in a 2:1 ratio, seasoning only with salt.
  4. 4 Toss the cress and soaked walnuts with the dressing and serve immediately.
