  • tarragon vinegar
  • water
  • anchovy fillets

Method

  1. 1 Cut bread and butter into thin fingers. Chop watercress.
  2. 2 Mix equal parts tarragon vinegar and water.
  3. 3 Layer a finger of bread and butter, chopped watercress, vinegar mixture, anchovy fillet, more watercress, and top with another bread and butter finger.
  4. 4 Stack sandwiches under a plate to flatten, then trim edges before serving.
