Warm Vanilla Custard Sauce

Ingredients

  • 2 egg yolks
  • 1 cup milk
  • 2 tablespoons sugar
  • ¼ teaspoon vanilla extract
  • Rum or brandy (optional)
  • Chopped almonds (optional)

Method

  1. 1 Beat egg yolks and sugar until creamy.
  2. 2 Pour scalded milk into the yolk mixture.
  3. 3 Return to heat and cook until slightly thickened, stirring constantly.
  4. 4 Remove from heat and stir in vanilla.
  5. 5 Whip with a wire whisk until light and foamy.
  6. 6 Serve warm with plum pudding, adding rum or brandy if desired.
