Warm Potato Salad With Tarragon Vinegar
Ingredients
- 6 medium potatoes
- Salt and pepper to taste
- Finely chopped celery
- Finely chopped parsley
- 2 tbsp tarragon vinegar
- 2 tbsp cider vinegar
- 4 tbsp olive oil
- 1 slice lemon (1/3 inch thick)
Method
- 1 Wash potatoes and boil in salted water until soft. Cool, peel, and slice thinly.
- 2 Layer potatoes in a baking dish. Season with salt and pepper, then sprinkle with celery and parsley.
- 3 Mix vinegars and olive oil. Bring to a boil, add lemon slice, and pour over potatoes.
- 4 Cover and warm in a 350°F oven until thoroughly heated.
